Shrimp & Sausage Cajun “Pasta” with Butternut Squash

I’m trying something new, Foodies. No more than two paragraphs before we get to the recipe! I used to be a “tell your entire life story before giving up the recipe” sort of person. That is…until I started using other people’s recipes. Sorry, but it’s ERKY to have to scroll through 17 pages of musings in order to get the recipe so my 2021 resolution is that when I do blog food, I’m not going to do that to you!

This pasta dish is one I taught when I was doing online cooking classes. I don’t do the classes anymore BUT here’s the recipe just the same. I’m working on an evergreen version of the cooking class along with a downloadable recipe book. When will that be done? I can’t make any promises! During the pandemic especially, I’ve been trying to honor my energy. But I’m working on it. Anyhoo…here’s the recipe.

Ingredients

Instructions
  1. Spray a pan with nonstick cooking spray, add sausage cook until browned. Add in shrimp until slightly browned. Remove from pan.
  2. Spray pan again and add onions. Cook one minute before adding tomatoes. Cook two more minutes (tomatoes may release water).
  3. Add tomato paste and water (up to 1/4 cup) if mixture is thick. Add seasoning. Simmer 2-3 minutes.
  4. Add noodles and cook 10 minutes or until noodles are soft. Add cooked shrimp and sausage in the last 5 minutes to simply warm through. Garnish with jalapenos and cheese.

  1. Is there an alternative that can be used other than tomato paste?

    • I am honestly not sure. I’ve only ever used tomato paste. It’s partially for that concentrated tomato flavor and partly to thicken. Maybe if you tell me why you don’t want to use it I can help more.
