  1. Set your oven to the broil setting.
  2. Spray a large, oven-safe skillet with non-stick cooking spray, set it over a medium flame and allow it to get hot.
  3. Add chorizo and cook, stirring about 2 minutes before adding chicken (the chorizo needs time to omit some oil). Stir chicken and sausage until both are cooked through.
  4. Add onions, bell pepper, garlic and spices and sauté until softened. If you are using roasted potatoes, add those here as well.
  5. Clear a well (hole) in the middle of your skillet, re-spray if needed, and pour in your eggs. Use a wooden spoon to scramble them completely before mixing into the meat/veggie mixture.
  6. Top with cheese and place under the broiler for about 1-2 minutes to allow the cheese to melt and brown as much as you like.
