Warning: People who are really into barbecue (and you know who you are), to you this recipe might seem like blasphemy. Or heresy. Or something else really bad ending in a “y.” But this is the “single mom who wants some bbq too” method. You want to spend hours cooking meat…be my guest.
So barbecue. I love it. Love, love, love! What I do not love is all the steps in making traditional barbecue. So when I have a hankering for some nice barbecue pork, I make this. The divas like it on a bun. I have taken to making my own KFC-style bowl with whatever veggies I’m serving (this night it was a bit of corn, tomato and okra) and just going to town with that. Either way, this stuff is yummy and ridiculously easy to make.
Nik’s Easy Pork Barbecue
1 package country ribs (if you want to go to the trouble of trimming the fat, be my guest, I don’t usually since I don’t eat this too, too often)
4 cups water
1 small onion, sliced
1 tsp each seasoned salt, garlic powder, and onion powder
1 bottle of whatever BBQ sauce you like
Directions:
Place ribs in a slow cooker with onions, seasonings and water.
Turn slow cooker on.
Walk away for four hours or so.
Come back. (see it’s also a very active recipe…;)
Drain about 85% of the excess water (in a colander so you don’t accidentally dump any of your meat) and pull apart meat with a fork until it is in shreds.
Add BBQ sauce and cook an additional 20 minutes or so.
Serve however you see fit.
This goes well with my low(er) carb cornbread (so long as you aren’t doing sandwiches). In fact, that might be my next ramekin creation.
